Mom's Chicken Soup Recipe


There's nothing more comforting than a homemade chicken soup, especially during a stressful time like now. To help boost your immunity, we questioned our mom on her famous soup recipe. Below you'll find the recipe to our mom's go-to comfort meal, filled with vital nutrients. This bowl of soup will warm you up and make you feel like everything is going to be alright, even if for a brief moment. Let this recipe be thy quarantine medicine.

Ingredients

 

chicken (cut to pieces or whole)

4 stalks of celery, cut in half

2 carrot sicks, cut in half

several sprigs of thyme

1 or 2 sprigs of rosemary

whole garlic bulb, cut in half, horizontally

1 or 2 onions, cut in half, horizontally

1 or 2 teaspoons of peppercorns, whole or ground

1/4 celery root, peeled and cut in thin slices

3 bay leaves

5 sprigs of parsley

1 fennel bulb, cut in half

 

Instructions

Throw in all the vegetables, herbs and chicken into a large pot and fill with water. Heat on stovetop on medium until soup comes to a boil. Remove any brown foam that floats to the surface. Season with salt when soup is boiling and then set to a simmer and cook until chicken is tender and vegetables are soft. Remove chicken from the soup pot, debone it and take off the skin. Take out all other ingredients from soup. Clean and cut in circles, 2 to 3 carrots and 3 to 4 stalks of celery. Add both to broth. Let simmer for 15-20 minutes, depending on vegetable crunch/softness preference. Shred chicken and place back in soup. Enjoy!
